Cherry Pie

For the pie crust: For the pie filling:
2 cups flour 6 cups cherries (frozen)
1 tablespoon sugar ½ cup sugar
½ teaspoon salt ¼ teaspoon salt
¾ cup butter ½ teaspoon cinnmon
½ cup ice water 2 tablespoons corn starch

Steps

  1. Preheat oven to 350°.
  2. Prepare crust according to the biscuit method.
  3. Preparing the crust:
    1. Split dough into two equal balls.
    2. Roll out bottom crust until it is 2 inches larger than pie plate.
    3. Using the rolling pin, roll up the bottom crust and place into pie plate
    4. Roll out top crust until it is the top diameter of the pie plate.
    5. Using the rolling pin, roll up the top crust.
  4. To make the filling:
    1. In a large bowl, defrost the cherries.
    2. Add in sugar, salt, cinnamon, and corn starch.
    3. Mix cherry filling well until no corn starch lumps remain.
  5. Pour filling into the pie.
  6. Place top crust onto pie.
  7. Pinch both crusts together
  8. Cut small slit in middle of pie.
  9. Bake in a 350° oven for approximately one hour, or until top crust is golden brown and filling bubbles out the top slit.
  10. Cool pie completely on counter before cutting.
  11. Refrigerate after cutting.
