For the muffins |
1 cup oat flour |
¼ teaspoon baking powder |
½ teaspoon baking soda |
1 teaspoon cinnamon |
¼ teaspoon nutmeg |
¼ teaspoon pumpkin pie spice |
¼ teaspoon salt |
¼ cup brown sugar |
1 cup canned plain pumpkin |
1 large egg |
1 teaspoon vanilla |
Steps
- Preheat oven to 375°.
- Mix muffins according to muffin method.
- Line muffin tray with 6 muffin liners.
- Fill muffin cups about 2/3 full.
- Bake for 12 to 15 minutes, or until toothpick in middle comes out clean.
